Ube is the Filipino word for purple yam. I know that may sound weird for a dessert, but trust me, it is so delicious. Ube is one of my favorite flavor of desserts and it is starting to get more and more popular in the States. I grew up eating ube desserts and I still can’t really describe the flavor. It truly is unique, and the vibrant purple color is oddly appetizing. When I would go to Filipino parties growing up, I would go straight for the ube desserts. There would be ube biko, ube puto, ube hopia, etc., and they all tasted amazing. I’m so glad that more people are starting to appreciate ube and all its glory. I will have lots of ube recipes coming so be sure to check out my page again soon for more ube inspired recipes! What's an Ube Brownie? Ube brownies are like a blondie with ube. So, technically not a brownie, but it’s what everyone calls them so I guess we’re going with it. Instead of using cocoa, we are using white chocolate to still give it that fudgy texture and decadent taste. Imagine biting into a fudgy, gooey brownie that is flavored with ube. That’s exactly what these are and they are delicious. Why you'll love this recipe Not only is this the best twist on a brownie, but it also quick and easy to make. If you have a party to attend, but no time to cook. These will save the day and are guaranteed to be a hit. They don’t need many cooking tools to prepare. I don’t know about you, but the worst part of baking (not that there is a bad part) for me is the clean up. This recipes will only leave with minimal dishes afterwards. Everyone will love these. Kids, adults, elders. They all can enjoy ube brownies and to make it fun, they are purple! Who doesn’t love a fun, colorful dessert. How to make Ube Brownies Making ube brownies is going to be similar to regular brownies or blondies. Ingredients: Baking White Chocolate Ube Extract Ube Halaya Eggs Butter Salt Granulated Sugar Brown Sugar All Purpose Flour That’s it! Tools: Mixing Bowl Whisk Spatula 8×8 Baking Pan Medium Sauce Pan Oven/Stove Parchment Paper Ube Brownie Recipe 1. Start by pre-heating your oven to 350F. Then line your 8×8 inch pan with parchment paper and have it hang over the sides. Lightly grease your pan and paper. 2. Boil water in your medium sauce pan. In your large mixing bowl, add your chopped up white chocolate and heat that over the bowling water. Keep mixing until all of it is melted. 3. Chop up the butter and add that to your bowl of melted white chocolate. Continue melting the butter in the same method and mix until the white chocolate and butter are fully melted and combined. Then set aside while you prepare the other ingredients. 4. Once prepared, mix in your ube halaya to the same bowl. Then add the ube extract, egg, salt, and sugar. Mix until all is combined. 5. Now, sift in your flour 1/2 cup at a time. Mix that in until combined. (Be sure to not over mix) 6. Transfer your ube brownie batter to your greased and lined baking pan. Then put it int he oven for 30-40 minutes or until the middle is fully cooked. Tip: Take a toothpick into the middle of the brownies and if no batter is on the toothpick, then it’s done! Be sure to not over cook it though. You want a gooey batter. 7. Let the brownies cool for 5-10 mins then transfer it to a wire rack to completely cool. 8. Once they are completely cooled, cut them into even pieces and ENJOY! Tips for Baking Use both ube halaya and ube extract. These both can be found at local asian markets. I have a local market that sells it, but if your’s doesn’t, you can find it online at various site. For the bake time, make sure these are not over baked. After they hit the 30 minute mark, if they aren’t done, I like to check them every 3 minutes. This is to make sure I don’t over bake it. Remember, you want that gooey fudgy texture that you aren’t going to get if it’s over cooked. Be sure to not over mix. You just want to mix until combined. An over mixed batter can cause the flour to dry up resulting in the brownies falling apart or crumbling. We want a moist, chewy brownie. To store the brownies, they will last in the fridge for about a week. They also freeze nicely if you want to save them for late night snack or baking ahead. To freeze, cut the brownies up into individual pieces. Then wrap them individually in plastic wrap and then foil. Place them in a freezer safe container or Ziploc bag. To thaw, take one out of the freezer and let sit out at room temperature or until the desired temperature. (They are nice and chewy when chilled) Ube brownies are quick, easy, and delicious. They satify your sweet tooth and your filipino craving. Try them with coffee, milk, or some vanilla ice cream.
